Dill Pickle Dip
My all time favorite snack is chips and dip. Any kind of chip. Any kind of dip. I do not discriminate. This dip is a party fave and will be the first thing to go. You will find your guests licking the bowl. It’s also great to eat all alone on the couch in your robe while watching Real Housewives reruns. Who needs a party to eat dip?!?! NOT ME!
what you need:
- 1 cup packed finely shredded/grated/drained dill pickles (buy the large whole pickles in a jar)
- 1 T fresh chopped dill
- 1 cup mayo
- ½ cup sour cream
- Pinch of cayenne pepper
- 3 tsp ranch dressing seasoning/powder
- 4 T pickle juice
- Lots and lots of salty potato chips
- special equipment needed: box grater
what you need to do:
- Before we begin: this is best served a day after making it (or at least ~6 hours in the fridge) because the flavors are able to soak together.
- Ok now on to the fun stuff….using a box grater, grate the pickles on the fine side. This is super messy so just, be prepared.
- Put the pickles on lots of paper towels and do your best to drain them so they aren’t super soggy. Don’t wring them out, just dab them a little. This too, is very messy.
- Mix together all of the other ingredients in a large bowl.
- Add pickles and stir until completely mixed.
- Cover with saran wrap and place in the fridge until ready to serve.
- Serve with potato chips!!
