Shortcut Shredded Chicken

I hate HATE cooking and shredding chicken. Seriously, it is the worst. But congrats to you because I have done all of the dirty work and you will never have to get chicken under your nails EVER AGAIN!

what you need:

  • Chicken breasts (however many you want to cook at this given time)
  • Chicken stock (if you don’t have this, plain water or water with a bouillon cube works just fine)
  • Salt
  • Pepper
  • special equipment needed: stand mixer

what you need to do:

  1. Add chicken breasts to a large pot (or a small pot if you are only make one or two) and cover with the chicken stock (or water/bouillon cube) and bring to a boil.
  2. Add one tablespoon of salt.
  3. Cook chicken in boiling stock until it is cooked all the way through.
  4. Remove cooked chicken from pot and add to the bowl of a stand mixer. Let it cool slightly.
  5. With paddle attachment, turn mixer on medium speed.
  6. Add salt and pepper (or whatever seasoning you want or prefer) and let the mixer do all of the heavy lifting for you.
  7. Chicken will be perfectly PERFECTLY shredded in the bowl of the mixer and your hands will stay CLEAN!
  8. You can use the shredded chicken for whatever your heart desires. Enchiladas. Mac~n~cheese. Salads. Chicken salads. Flautas. Soup. Stew. Dog food. Whatever you want!
