Sriracha Mac~n~Cheese
This mac, to me, is like if Taco Bell were a pasta. Spicy, cheap, cheesy, and makes you kinda wish you had a salad instead. But also: delish and very addicting. 10/10 hangover food. If you can get off of the couch, that is.
what you need:
- 2 T minced garlic
- 2 T sriracha (less or more depending on spice level you prefer, 2 T keeps it pretty dang spicy)
- 2 T ketchup
- 3 T soy sauce (low sodium is preferred but you do you)
- 1 T butter or oil (your preference/whatever you have)
- 1 tsp sesame oil
- 2 slices yellow disgusting but delicious processed american cheese (kraft or velveeta pls do not use “good” cheese)
- 2 T chopped green onions
- 2 cups noodles of your choice! (think shells or elbows or something similar)
what you need to do:
- Bring water to a boil, make sure to salt the water to season the noodles!
- Add noodles once water is in a rolling boil. Stir every minute or so to make sure they are not sticking to the bottom of the pan.
- Mix together sriracha, ketchup, sesame oil, and soy sauce in a small bowl.
- In a saucepan (here is my FAVEEEE!) add butter/oil and once melted or warm, add garlic and toast it until garlic is tanned. Like a medium spray tan or a weekend at the beach.
- Add in the sauce mixture and whisk together until combined. Bring to a simmer. Let it hang out here on the lowest possible heat while the noodles cook.
- Using a slotted spoon, add cooked noodles to the sauce and stir until combined.
- Add slices of cheese on top of noodles. Put a lid over the pan and let the steam melt the cheese. (about 2 min)
- Once cheese is melty and gooey, mix all of it together.
- Plate and top with green onions!
**you can double this to make more, this should make enough for about two servings or one giant serving if you don’t like to share
