Shortcut Shredded Chicken
I hate HATE cooking and shredding chicken. Seriously, it is the worst. But congrats to you because I have done all of the dirty work and you will never have to get chicken under your nails EVER AGAIN!
what you need:
- Chicken breasts (however many you want to cook at this given time)
- Chicken stock (if you don’t have this, plain water or water with a bouillon cube works just fine)
- Salt
- Pepper
- special equipment needed: stand mixer
what you need to do:
- Add chicken breasts to a large pot (or a small pot if you are only make one or two) and cover with the chicken stock (or water/bouillon cube) and bring to a boil.
- Add one tablespoon of salt.
- Cook chicken in boiling stock until it is cooked all the way through.
- Remove cooked chicken from pot and add to the bowl of a stand mixer. Let it cool slightly.
- With paddle attachment, turn mixer on medium speed.
- Add salt and pepper (or whatever seasoning you want or prefer) and let the mixer do all of the heavy lifting for you.
- Chicken will be perfectly PERFECTLY shredded in the bowl of the mixer and your hands will stay CLEAN!
- You can use the shredded chicken for whatever your heart desires. Enchiladas. Mac~n~cheese. Salads. Chicken salads. Flautas. Soup. Stew. Dog food. Whatever you want!
