Peanut Butter Banana Baked Oatmeal
I woke up this morning with 3 overripe bananas and a plate of banana bread from last week that I still had not finished. I just cannot make any more banana bread, I can’t do it. I am banana bread’d out. So I decided to dive deep into my brain and brainstorm what else I could make with bananas and came up with this baked oatmeal that is super simple, quick to prepare, and DELICIOUS! Prepare it in advance and bake when ready to serve!
what you need:
- 2 – 3 overripe bananas (the more the merrier for the most banana flavor)
- 1 1/2 cups quick oats
- 1/2 tsp kosher salt
- 1 tsp cinnamon
- 1/3 cup flour
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1 tsp vanilla extract or vanilla bean paste
- 1/8 tsp nutmeg
- 1 cup buttermilk
- 2 tsp melted butter
- 1/4 cup + 2 tablespoons smooth peanut butter
- 1 egg
what you need to do:
- Preheat your oven to 350 degrees.
- Grease a small casserole dish.
- In a large bowl, mix together oats, salt, flour, brown sugar, cinnamon, baking powder, and nutmeg. Set aside.
- In a separate bowl, mash your bananas with a fork.
- Add in peanut butter and mix until blended.
- Add in milk, melted butter, and vanilla. Mix until combined.
- Add your egg and mix until the egg is completely blended in.
- Make a well in the center of the dry ingredients, and then pour in the banana mixture. Stir until all of the dry ingredients are blended into the wet ingredients.
- Pour into your casserole dish.
- Bake for about 25 minutes, or until the top is browned and when you shake the dish it does not jiggle.
- Put your 2 tablespoons of peanut butter into a small bowl and microwave for about 10 – 15 seconds, the peanut butter should be a bit runny but not too thin.
- Pour heated peanut butter over the top of the baked oatmeal and smooth all around the top until completely covered.
- Let oatmeal sit for about 5 minutes before serving to let it firm up for slicing.
- Serve warm!
