Oatmeal Apple Skillet Cookie

Oatmeal cookies are one of my favorite cookies. So, I added some spiced apples and made ONE GIANT COOKIE and topped it with salted caramel and powdered sugar. If you don’t want to make a skillet cookie, you can totally just scoop these and bake as regular cookies, but that isn’t as fun???

what you need:

  • 7 tablespoons unsalted butter, room temperature
  • 6 tablespoons brown sugar
  • 4 tablespoons granulated sugar
  • 1 egg, room temperature
  • 1 tsp vanilla extract
  • 3/4 cup all purpose flour
  • 1 1/4 cups old fashioned oats
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 cup chopped apples I used 2 Fuji apples
  • Salted Caramel, for serving
  • Powdered sugar, for serving

what you need to do:

  • Preheat oven to 375 degrees F.
  • Grease a regular sized cast iron skillet and set aside.
  • In a large bowl, toss your chopped apples with 1 teaspoon of cinnamon. Make sure every piece of apple is coated.
  • In the bowl of your stand mixer, beat your butter and both sugars until light and fluffy, about 3 – 4 minutes.
  • Add in your egg and vanilla extract, and mix until you can no longer see any egg.
  • With mixer on slow, add in flour, salt, and baking soda. Mix until combined, scraping down the sides of the bowl.
  • Add in your apples and mix by hand until apples are thoroughly mixed in.
  • Pour the batter into the skillet and spread to even it out.
  • Bake in preheated oven for 18 – 20 minutes, or until it is browned and no longer raw in the middle.
  • Top with dusted powdered sugar and a drizzle of Salted Caramel!
  • Best served warm right out of the oven!
