Healthy Breakfast Scramble

I am not necessarily a “breakfast person” and I have been accidentally intermittent fasting since I graduated college. If I am going to eat breakfast, the only thing I want are TACOS and this scramble is the perfect taco filling and it’s also great on its own. I wrap my scramble up in “healthy” tortillas and smother them with salsa and cheese, the perfect breakfast!

what you need:

  • 1/2 white onion, diced
  • 1 sweet potato, shredded with the largest side of the cheese grater
  • 1 jalapeno, seeds removed, diced very small
  • 1 cup finely chopped shredded kale
  • 1 teaspoon coconut oil
  • 1 lb turkey breakfast sausage or whatever kind of breakfast sausage you prefer!
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon ground cumin
  • 2 cups egg whites OR 8 large eggs, whisked
  • Whole wheat low-carb tortillas, salsa, cheese, guacamole, or refried beans for serving!

what you need to do:

  • In a large nonstick skillet on medium heat, melt your coconut oil. Add in the onions, sweet potatoes, kale, and jalapenos. Cook for about 10 minutes, stirring occasionally to make sure it is all cooking evenly. Add the salt, pepper, and cumin and stir well, then cook an additional 2 – 3 minutes.
  • The veggies should be fully cooked, which you will know they are done when the onions are translucent, the kale is wilted, and the sweet potatoes are very soft. Pour the cooked veggies onto a plate and set aside.
  • Return the pan to the heat, and add in the breakfast sausage. Cook until the sausage is browned, and use your spoon to break up the meat into smaller pieces. Once the meat is fully cooked, drain the fat, and then add the cooked veggies back into the pan. Stir well.
  • Adjust the heat to low, and then pour in the eggs, stirring with a spatula to make sure the eggs get good and scrambled and are not sticking to the pan. Continue to stir, scraping the sides and bottom of the pan until the eggs are cooked to your preference. I cook mine to a hard scramble, as shown in the photos.
  • Remove from the heat and serve with healthy tortillas, cheese, and salsa!
  • Here is my big tip: I make tacos with the scramble and then wrap them in foil and freeze them for a healthy breakfast meal prep! Wrap them up individually, put them all in a freezer safe ziplock bag, and then microwave them when you are ready to eat! These are a super healthy and perfect for a breakfast on the go.
