Coconut Vanilla Bean Chia Seed Pudding
I honestly never eat breakfast. I am never hungry in the mornings. I just want a coffee and then maybe a snack around 10am and I will eat lunch at 2pm sometimes. But sometimes at work we have leftover breakfast catering from meetings and there is this chia seed pudding that is……….like crack. I can eat probably a gallon of it. A GALLON!!!! And so I tried my best to recreate it because, I miss it. So much.
Also this is the easiest thing on the planet and if you mess this up just give up forever and commit to only eating if you order through Postmates.
what you need:
- 1/2 cup chia seeds
- 2 cups coconut milk
- 1 tablespoon honey or agave nectar
- 1 tsp vanilla bean paste
- Sprinkle of cinnamon
- Fresh berries, toasted coconut, granola, etc. for topping!
what you need to do:
- In a large bowl that has a lid (I use a big ole tupperware bowl) combine all of the ingredients and stir until all is combined.
- Put it in the fridge for at least 6 hours, preferably overnight.
- For the first 30 minutes, check on it every 10 min or so and stir it. You may need to add more coconut milk depending on your consistency preference. If you notice in the first 30 min that your pudding is super thick, add a bit more milk as it will continue to soak up that milk and you want it to be like a loose pudding consistency.
- Store in the fridge for about a week.
- I put mine in mason jars with about a tablespoon of granola at the bottom, and top with berries and toasted coconut. Keeping them in mason jars makes them a great grab and go breakfast!

I made this last night and just had some for breakfast. So easy to make and will definitely be my go to breakfast. I put strawberry shortcake granola on the bottom and topped with fresh strawberries.
