Caesar Salad Whipped Ricotta Dip
The idea of a “caesar salad” dip came to me extremely randomly and once I got it in my mind it was all I could think about. This is your new favorite appetizer. It is also as easy as it gets and uses only one thing: a food processor.
what you need:
- 1 lb Ricotta use whole fat or skim, it all works!
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp crushed red pepper flakes
- 1 tablespoon minced garlic or 3 garlic cloves
- 4 tablespoons Caesar dressing
- Handful of fresh Italian parsley I did not measure this since it all goes into a food processor, so I just grabbed a chunk and tossed it in
- 1 tablespoon extra virgin olive oil
- 1/4 cup shredded parmesan cheese
what you need to do:
- Place all items in the bowl of your food processor and whip until smooth, about 3 – 4 minutes.
- If you used whole fat ricotta, you may need to add more olive oil or Caesar dressing to thin it out to your preference.
- Place covered in the fridge for a bit to make sure the flavors all mesh together and it gets all nice and chilly.
- Serve cold with fresh veggies, toasted bread, or crackers!
