Bacon Jam Grilled Cheese

My sincerest apologies to every sandwich I have ever had in my life, because this, THIS SANDWICH is the best sandwich I have ever had. My life has been changed. The secret to the best grilled cheese of your life is to coat the bread in mayo instead of butter. And sprinkle parmesan on that mayo to give it a nice crispy crust. And use good bread. Good bread it also very important.

what you need:

I am not giving any real measurements here because you don’t need them!

  • Good sourdough bread (do not use a regular loaf of white bread it is NOT THE SAME!!!)
  • Smoked sharp cheddar cheese, grated
  • Gouda cheese, grated
  • Bacon Jam (click for recipe!)
  • Parmesan cheese, FINELY grated
  • Mayonnaise
  • Salt
  • Pepper

what you need to do:

  • Heat a nonstick pan on lowish heat (I had mine on the 3).
  • Grab however many pieces of bread you are using, and spread a very very thin layer of mayo on one side of each piece.
  • Sprinkle the parmesan onto the mayo and then use your fingers to rub it into the mayo so that if you pick up the bread the parm won’t just fall off.
  • Flip the bread over, and one side spread your cheddar and gouda evenly.
  • On the other side spread some bacon jam.
  • Sprinkle a pinch of salt and pepper over the bacon jam.
  • Close the sandwich and place it into the center of your pan very gently so the cheese does not escape.
  • Cook about 4 minutes each side, pressing down firmly with a spatula to make sure you get all of that mayo melted into the bread.
  • Once each side is perfectly golden, cover with a lid and take off of the heat. This makes sure the cheese gets super melty and gooey.
  • After about a minute or so, remove the sandwich from the pan, cut in half using a serrated knife, and then cry of happiness because you are eating the best sandwich of all time.
  • Repeat this process for the second and third sandwiches that I know you will be making.
