Apple Pie Chia Seed Pudding

what you need:

  • 1/2 cup chia seeds
  • 3 tablespoons yogurt I used coconut milk dairy-free yogurt
  • 1/4 cup apple butter or sugar free applesauce
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon honey
  • 1/8 teaspoon stevia granules
  • 1 1/2 cups unsweetened almond milk
  • 1 teaspoon vanilla extract
  • Chopped pecans, for serving

what you need to do:

Combine all ingredients in a large Tupperware bowl or bowl with a lid. Make sure all of the chia seeds are completely coated in liquids. Leave on the counter for 30 minutes, and if the pudding looks dry or extra thick, add another 1/2 cup of almond milk.

Cover and put in the fridge overnight.

To serve, scoop 1 cup into a bowl, and top with chopped pecans and a sprinkle of cinnamon.
