Apple Fritter Loaf

This loaf tastes like an apple fritter giving you a big warm hug. Put on your favorite turtleneck sweater and ugg boots and eat this right out the pan and let the essence of fall sweep you away!!!!!!!!

what you need:

  • 1/2 cup brown sugar, packed
  • 1 tablespoon cinnamon
  • About ~2 cups of diced apples, I used 1 granny smith apple and 1 honeycrisp apple I mix my apples to get different levels of tart and sweet! You can totally just use one kind
  • 2/3 cup granulated sugar
  • 1 stick unsalted butter, at room temperature
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup milk, room temperature
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt

Glaze:

  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons milk or cream
  • 1 tablespoon melted butter

what you need to do:

  • Preheat your oven to 350 degrees F.
  • Grease and line the bottom of one large loaf pan. (This can be split up into 3 – 4 mini loaves instead of one large.)
  • In a large bowl, toss your diced apples with the brown sugar and cinnamon, make sure every piece of apple is coated. Set aside.
  • In the bowl of your stand mixer, beat your butter and granulated sugar until light and fluffy, about 3 – 4 minutes. Scrape down the sides of the bowl.
  • With mixer on slow, add in vanilla and the eggs one at a time. Do not add the second egg until the first one has completely disappeared into the batter. Scrape down the sides and the bottom of the bowl and then mix again on medium for about 15 seconds.
  • With mixer on slow, add in the milk and mix until combined.
  • Add in flour, salt, and baking powder, and mix until just combined. Stop and scrape down the sides and bottom of the bowl, making sure to get all of the bits of flour that have settled into the bottom.
  • Mixing by hand, add in about 3/4 of the diced apples and mix until JUST combined. Do not overmix or your bread will be tough.
  • Pour batter into the greased pan(s) and spread to make sure it is even. Bang the pan on the counter a few times to make sure the batter and apples settle into the pan.
  • Sprinkle the reserved diced apples on top of the batter, and using a spatula or your hands, lightly press them into the batter just a bit.
  • Bake in oven for 40 – 50 minutes or until the center reaches 200 degrees F. You can also check the doneness by inserted a toothpick into the center, and it is done when it comes out clean. The top should be browned and the center should not be jiggly.
  • Remove from oven and let cool about 30 minutes, then use a butter knife along the edges to make sure it does not stick, and flip out onto a plate or serving tray. If you do not let it cool and try to flip it out too soon, the bread will break. So be careful!
  • To make the glaze: combined all ingredients and mix with a whisk until it has thinned out and can be poured. Pour over the warm loaf. If the glaze is too thick, add in more milk 1 tablespoon at a time. If glaze is too thin, add in more powdered sugar 1 tablespoon at a time.
