I saw these cute little mini watermelons at Whole Foods anddddd it was 103 degrees out, and the first thing I thought was “wow I would love an aqua fresca” so, here we are.
what you need:
- 1 mini watermelon (or however much watermelon you can fit in your blender, quantity does not really matter in this) (make sure whatever you have, it is seedless)
- 1/2 lime
- 1/8 tsp fine sea salt
- 1 cup cold water
- 1 tsp agave nectar / honey / sugar / whatever you have
- special equipment: blender and fine mesh strainer
what you need to do:
- Cut up your melon into chunks, making sure to cut off all of the rind.
- Put all of the watermelon into the blender.
- Add the juice of the lime, sea salt, agave, and water and puree for about 30 seconds or until the mixture is a smooth consistency, no chunks!
- Stir it up a little bit and then blend again for another 10 seconds.
- Grab a large bowl, put a fine strainer over it (NOT A COLANDER), and gently pour the contents of the mixture into the strainer, stopping if you need to let it drain.
- Using the back of a wooden spoon, push the pulp against the edges of the strainer, mixing it around and getting all of that good juice out and into the bowl.
- You can dump the leftover pulp or use it for a smoothie or whatever your heart desires.
- Using a ladle, move the aqua fresca into a pitcher, colander, mason jar, etc. Put it in the fridge for a few hours.
- Serve over ice with a lime wedge!
- Add a little bit of tequila or vodka if you’re feelin’ it. Couldn’t hurt.
- Would also be good with some champagne for some mimos.
- Alsoooo, this will separate in the fridge and look odd, but just stir it up before you pour it and you’re good to go!
